UV light boosts antioxidants in sliced carrots

Exposing sliced carrots to ultraviolet light can boost levels of antioxidants—natural compounds that may provide health benefits.

But it can't be just any UV light. It has to be UV-B, one of the light wave spectrums produced by the sun.
