potato varietiesWith the increasing number of potato varieties out there, it's sometimes hard to figure out what potato to buy for what use.

The Eagle-based Idaho Potato Commission has taken the guesswork out of that with a downloadable varieties poster.

A variety guide on the commission's website,, goes into more detail.

Visitors can click on the name beside an image of a particular variety to learn more about it and the best uses.

The Russian banana, for example, is a buff-skinned fingerling that has a rich, buttery flavor and is well suited for potato salads, roasting and sauteing.
